The Palamós prawn — red prawns (Aristeus antennatus) caught in the deep underwater trenches offshore — is one of the most celebrated products of Catalan cuisine. Its sweet flesh is best eaten barely seared, almost raw.
Every afternoon the trawlers come in and the fish auction (subhasta) springs to life at the llotja: the spectacle of crates of fresh fish sold under the hammer is well worth the detour. The “Gamba de Palamós” label guarantees the origin.
Good to know: the prawn remains a pricey product; to taste it at the best value, look out for the tasting menus at the harbour restaurants.
